soup of the week ending 28 oct 2018

Monday: an amalgam of leftovers from Thursday and Friday, the remains of the onion gravy from a toad in the hole, and a fistful of lentils. Delicious – tasted just like split pea and ham. Very odd, as there were neither split peas nor ham in it.

Tuesday: A tiny bit of yesterday’s soup, plus cabbage leaves, leek tops, and a potato (see image at top of post).

Thursday: one sweet potato, two carrots, a heaped teaspoon of Ras al Hanout spice mix. This could have done with a bit more spicing, but I fear our RaH is a bit elderly.

Friday: a handful of red lentils, a muffin-sized portion of chicken stock (lots of chicken stock!), about one third of a leek, and a goodly dollop of tomato ketchup. Inexplicably, given we don’t eat it, there are two bottles of this in the cupboard, so I’m trying to Use Them Up; soup seems as good a way as any.

Saturday: yes, we had soup on Saturday. It was cold, what can I say. A slightly wrinkly yellow bell pepper and a sweet potato. And a pinch of chilli flakes. Lovely.

Please note; these soup recipes are vegan/vegetarian, except Friday’s. You could easily substitute water or veg stock for the chicken in that one. Oh, and I can’t swear as to the vegan-ness of tomato ketchup.

Oh, and if you’re wondering why there’s never a Wednesday soup, it’s because I do a shift in a charity shop on a Wednesday, and so I’m never home for lunch.
